Ecuador: land of the andean chocho, ancestral seed of the future

To Guinness World Record in Quito ‘Giant Cevichocho Pot’.

High in the Ecuadorian Andes, where the páramo meets the sky, flourishes one of the world’s most remarkable legumes: the Andean chocho (Lupinus mutabilis).

Cultivated for over two thousand years by pre-Incan civilizations, this ancestral seed has long symbolized strength, harmony, and reverence for Pachamama, becoming a sacred and sustainable source of nourishment.

Chocho thrives in the high-altitude ecosystems of the Andes, between 2,500 and 3,800 meters above sea level, enduring harsh climates and nutrient-poor soils. Its natural nitrogen-fixing ability enriches the land and supports regenerative farming practices, embodying ancestral wisdom that harmonizes humanity with nature.

Modern science validates what Andean communities have always known: chocho is a powerhouse superfood, boasting up to 50% plant-based protein, along with high levels of fiber, calcium, iron, and a low glycemic index. It offers a nutritious and eco-friendly alternative to animal proteins—ideal for balanced, mindful eating.

From time-honored dishes to cutting-edge culinary innovation, chocho continues to inspire Ecuadorian cuisine. The beloved “cevichocho”, a Quito favorite known for its vibrant flavor and freshness, has evolved into powdered plant protein—perfect for daily wellness—and into chocho-and-cacao snacks, a fusion of two of Ecuador’s natural treasures.

This year, Ecuador will celebrate its agricultural legacy with the “Giant Cevichocho Pot”, an event aiming to set a Guinness World Record in Quito. More than a culinary milestone, it will be a tribute to biodiversity, cultural identity, and sustainability, bringing together communities and visitors through flavorful storytelling and shared heritage.

For responsible, sustainable tourism infused with the authentic taste of Ecuador.
